About the Book

The book “Production Technology of Underexploited Vegetables” provides comprehensive and practical information on the cultivation and management of lesser-known vegetable crops. Underexploited vegetables play an important role in ensuring food and nutritional security, particularly among rural and economically weaker communities. These vegetables are valuable sources of essential nutrients and contribute to improving dietary diversity and human health. Many underexploited vegetable crops are cultivated in specific geographical regions and provide livelihood and income opportunities to small and marginal farmers. The book highlights the importance and potential of underutilized vegetables in Indian agriculture. Special attention is given to important temperate vegetables such as broccoli, Brussels sprouts, leek, lettuce, asparagus and celery. It also emphasizes the export potential of these vegetables and their importance in strengthening India's horticultural economy. The book provides scientific information on the cultivation practices and production technologies of different underexploited vegetable crops. Various aspects of crop production, including climatic requirements, soil conditions, varieties, sowing, planting and nutrient management, are covered. It also provides information on irrigation, intercultural operations, plant protection, harvesting and post-harvest management. The contents have been prepared by synthesizing information from research papers, published literature, books and the authors' personal experiences. Special efforts have been made to align the contents with the ICAR Deans' Committee recommendations for postgraduate students of Vegetable Science. The book is written in simple and understandable language to make scientific information accessible to a wider readership. It serves as a useful reference for vegetable growers, rooftop gardeners, students, researchers, teachers and horticultural professionals. Overall, the book aims to promote the scientific cultivation, utilization and commercialization of underexploited vegetables, thereby enhancing nutritional security, farmers' income, livelihood opportunities and sustainable horticultural development in India.
